How to Carve a Turkey: A Step-by-Step Guide for Thanksgiving
You spent hours roasting the perfect bird. Now comes the moment everyone is watching. The good news is that carving a turkey is less about skill and more about method and a sharp knife. Follow these steps and you will serve neat, juicy slices without the tableside wrestling match.
What you need
A long, sharp carving knife, a sturdy carving fork and a large board with room to work. Our NEW carving sets, the Beacon 3-Piece Carving Board Set and Delta 3-Piece Carving Board Set give you all three in one box. The knife and fork are forged from high-carbon German stainless steel, and the board is built to match with all FSC-certified sustainable wood.
Step 1: Let it rest
Rest the turkey for 20 to 30 minutes after it comes out of the oven, loosely tented with foil. Resting lets the juices settle back into the meat, so they end up in the slices instead of on the board. Use the time to finish gravy and sides.
Step 2: Remove the legs and thighs
Set the turkey breast side up on your board. Pull a leg away from the body and slice through the skin between the thigh and breast. Press the leg outward until the hip joint pops, then cut through the joint to free it. Repeat on the other side.
Step 3: Separate drumsticks and thighs
Find the joint between the drumstick and thigh by bending it. Cut straight through that joint. Serve drumsticks whole, and slice the thigh meat off the bone for anyone who loves dark meat.
Step 4: Take off the wings
Pull each wing outward, find the shoulder joint and cut through it. Wings can go straight to the platter.
Step 5: Remove each breast in one piece
This is the pro move. Steady the bird with your carving fork. Run your knife down one side of the breastbone, then follow the rib cage with long, gentle strokes until the whole breast lifts away. Repeat on the other side.
Step 6: Slice against the grain
Lay the breast flat on the board and cut crosswise into slices about 1/4 to 1/2 inch thick. Cutting across the grain keeps every slice tender and gives each one a bit of crispy skin.
Step 7: Arrange and serve
Fan the breast slices on a warm platter with the dark meat alongside. Spoon a little warm stock over the meat to keep it moist while everyone gathers.
Pro tips
Let the knife do the work. Long, smooth strokes beat sawing every time.
Save the carcass for stock. Your leftovers will thank you.
