New Yorker or not, you’ll fall in love with the famous chopped cheese. Whether it’s a bodega favorite from your childhood or your first time trying it, one bite will knock your expectations out of the park.
Ingredients
Ground beef (85/15 or 90/10 — avoid extra lean)
Butter (for frying)
Onion (finely chopped)
Kosher salt, black pepper, garlic powder
American cheese (or mozzarella, Pepper Jack, etc.)
Shredded lettuce
Mayonnaise, ketchup
Hoagie rolls
Tomato (sliced)
Steps
Step 1: Toast the Buns
Use the Gridiron 8" Bread Knife to slice your hoagie rolls cleanly in half. Toast them, then spread mayo on both sides.
Step 2: Cook the Beef
Melt butter in a skillet over medium-high heat. Add onions and sauté until softened, then push to the side. Add your ground beef patty, season with salt, pepper, and garlic powder. Cook 2–4 minutes per side, then break apart and mix with the onions until no pink remains.
Step 3: Chop + Cheese It
Use the Gridiron Chef’s Knife to divide the meat into four portions. Top each with a slice of cheese and cook until melted.
Step 4: Assemble
