1 In a large pan over high heat, char purple cabbage & scallions with 2 TB oil, 5 - 7 mins. Cool, chop & season with lemon juice.
2 In the same pan over medium heat, saute spinach & chard with remaining 2 TB oil, 2-3 mins.
3 In a large serving bowl, mix cabbage & sauteed greens. Season with salt & pepper. Garnish with scallions & julienned lemon peel.
Get a deep char on the cabbage and scallion to vary the flavors in the dish, and add a splash of balsamic or rice vinegar if you have either on hand.
