Purples & Greens

Purples & Greens make the perfect (and quick!) side dish for your holiday meals. 

Prep Time: 5 mins

Cook Time: 7 mins

Serves:  4-6

  • 1 head purple cabbage, wedged
  • 2 scallions, plus more for garnish
  • 1/4 cup olive oil, divided
  • 1 TB lemon juice
  • 1 bunch Swiss chard, chopped
  • 1 TB lemon peel, julienned
  • Salt & freshly ground pepper to taste

 In a large pan over high heat, char purple cabbage & scallions with 2 TB oil, 5 - 7 mins.  Cool, chop & season with lemon juice.

2  In the same pan over medium heat, saute spinach & chard with remaining 2 TB oil, 2-3 mins.

3   In a large serving bowl, mix cabbage & sauteed greens.  Season with salt & pepper. Garnish with scallions & julienned lemon peel.

Chef Tips: 

Get a deep char on the cabbage and scallion to vary the flavors in the dish, and add a splash of balsamic or rice vinegar if you have either on hand.
