  3. Cook the Steak: In the same skillet, add the sliced ribeye and cook on high heat for about 2-3 minutes, until it’s browned and cooked through. Season with salt and pepper to taste.

  4. Assemble the Sandwich: Toast the hoagie rolls lightly, then layer the steak and onions on the bottom. Top with a generous amount of melted provolone cheese or whiz, depending on your preference. If you want that authentic Philly feel, drizzle on some hot sauce or ketchup.

Kansas City is synonymous with BBQ, to the point where this writer visited the city, didn’t talk to anyone, and still managed to hear about it before being there two hours.

They’ve got a lot to brag about.

What better way to celebrate the Chiefs than with some slow-cooked, fall-off-the-bone ribs slathered in tangy, sweet sauce? Here’s a recipe that will have your guests asking for seconds, thirds and- just like the Twin City itself - telling everyone how great your barbecue is.

Ingredients:

  • 2 racks of baby back ribs

  • 1/4 cup brown sugar

  • 3 tbsp paprika

  • 1 tbsp salt

  • 1 tbsp black pepper

  • 1 tbsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp cayenne pepper (optional for heat)

  • 1 1/2 cups Kansas City-style BBQ sauce (like Gates or Arthur Bryant’s)

Instructions:

  1. Prep the Ribs: Remove the membrane from the back of the ribs using your Schmidt Brothers Chef Knife. This helps the seasoning penetrate the meat and makes the ribs even more tender.
