Ginger Cranberry Sugar Cookies are the perfect holiday season treat!

Makes: 36 cookies


  • 2 1/4 cups all purpose flour
  • 1 TB ground ginger
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 3/4 cup sugar
  • 3/4 cup light brown sugar
  • 1 egg
  • 1 1/2 cups dried cranberries
  • 1 1/2 cups crystallized ginger, chopped

1   Preheat oven to 375 F.

2   Whisk flour, ginger, baking soda & salt.

  In the bowl of a stand mixer with a whisk attachment, cream butter & sugars until light & fluffy. Beat in egg until fully incorporated; mix in dry ingredients. Fold in cranberries.

  On a parchment-lined baking sheet, portion 1 TB per cookie & press 1/2 tsp of crystallized ginger in the center of each cooke. Bake until golden brown, 8-11 mins; cool.

Chef Tips: 

Use fresh minced ginger instead of - or in addition to - ground ginger for a more peppery taste.
