Ginger Cranberry Sugar Cookies are the perfect holiday season treat!

1 Preheat oven to 375 F.
2 Whisk flour, ginger, baking soda & salt.
3 In the bowl of a stand mixer with a whisk attachment, cream butter & sugars until light & fluffy. Beat in egg until fully incorporated; mix in dry ingredients. Fold in cranberries.
4 On a parchment-lined baking sheet, portion 1 TB per cookie & press 1/2 tsp of crystallized ginger in the center of each cooke. Bake until golden brown, 8-11 mins; cool.
Use fresh minced ginger instead of - or in addition to - ground ginger for a more peppery taste.
