Mother’s Day is Around the Corner


Spring has officially arrived, and along with it comes one of our favorite holidays to celebrate the women in our lives - Mother’s Day.  This past year has weighed on all of us, yet we would venture to say that all of the moms out there have absorbed an extraordinary amount of the pressure that we’ve all been living through.  


To all of the women out there who are moms keeping the laughter levels high, the snuggles and cuddles on demand, and the remote schooling lessons in order - we admire you and salute you.  To the women who are hoping or trying to become moms themselves - we see you and respect you.  And, to the moms who raised us and who forever remain our inspiration and our moral compasses - we thank you and love you.  


In honor of this upcoming Mother’s Day - we teamed up with Bake it With Mel, 2x Chopped champion on food network, to inspire you with a decadent chocolate cake (recipe below!) that’s sure to delight the moms that you will be celebrating this year. After all - I think we can all agree that all the women in our lives deserve a day to relax and be appreciated now more than ever.  Regardless of where they are on the mom journey.

Decadent Chocolate Cake 

Yields: 1 - 9 inch round cake 

Have all your ingredients at ROOM TEMP​

 In one large mixing bowl combine: 

  • 30g Cocoa powder 
  • 110g All Purpose flour 
  • 75g Dark brown sugar 
  • 75g Granulated sugar 
  • 1 tsp salt 
  • 1 tsp baking soda 
  • 120g chocolate chips ( I like Guidarelli 60%) 

 With spatula mix all of the ingredients together to combine them 

 In a smaller bowl combine all the wet ingredients: 

  • 3 tbsp Neutral oil ( grapeseed, vegetable or sunflower) 
  • 2 eggs + 1 yolk 
  • 120g buttermilk (yes this is very important to get a fluffy and light cake. If you don't have any you can make your own by combining 120g whole milk + 2 tbsp of lemon juice or white vinegar let sit for 15 minutes ) 

 Pour all of the wet ingredients into the larger bowl with the dry ingredients. Mix to combine well and now add in the final secret ingredient that brings it all together - boiling water!  Pour over the whole cake mixture 100g of boiling hot water. 

The reason we add this at the end is 1. So it does not cook the eggs in the cake batter 2. We want to use the heat from the water to melt down some of those chocolate chips. Its OK if it doesn't melt them all. I think that makes a great texture.

Pour the cake batter in a LINED and buttered 9 inch round cake mold. Bake at 350F for 20 to 25 minutes until the knife inserted comes out clean. 

Allow the cake cool COMPLETELY on a cooling rack or out of its mold. It will keep cooking in the hot mold out of the oven, that's why its important to remove it. 

 

Time for Frosting

Let's make the perfect chocolate buttercream frosting.  Light and creamy and so delicious this will become a family favorite! 

 In a large mixing bowl attached with PADDLE attachment

Add in:

  • 227g SOFT unsalted butter ( Not melted, not cold, the texture of the butter should be like lotion)
  • 200g powdered sugar (half now half later) 
  • 3 tbsp of whole milk 
  • (150g dark chocolate chips + 40g of milk ) This gets added in LAST

 Allow this to mix on medium speed for at least 15 minutes. Every 5 minutes or so make sure you scrape down the sides of the bowl with a spatula and continue mixing. 

It will go from very yellow to very white, airy and fluffy. 

Once its nice and fluffy add in the second half of your powdered sugar.

Mix for 5 more minutes on medium speed. 

 Place the chocolate chips + milk in the microwave for 20 seconds to melt them and whisk together. IT SHOULD NOT BE HOT WHEN ADDING THIS TO YOUR BUTTERCREAM.  IF IT IS, IT WILL MELT ALL OF YOUR FROSTING. 

 All the chocolate mixture to cool and add that into your butter cream mix for a few more minutes just until well combined. 

 

Assembly time:

Frost and decorate using your favorite Schmidt Bros serrated knife to create those beautiful squiggles on top. 

Serve the cake at room temperature and make sure to cut it with the Chef knife for the perfect slice.
